Kale with Caramelized Onions
This quick side dish can be made (and eaten) in 15 minutes.

  1. 1 pound fresh kale, chopped
  2. 1 medium onion, sliced thin
  3. 1 tablespoon lemon juice (optional)
  4. Salt and pepper to taste
  1. Heat 1 tablespoon of oil in saute pan over medium-low heat and add the onions.
  2. Cook onions over medium heat very slowly, stirring occasionally, until onions are brown. Do not burn.
  3. When finished, remove from heat and set aside.
  4. In a separate saute pan, heat remaining tablespoon of oil over medium heat.
  5. Add chopped kale and saute until tender, about 8 minutes.
  6. Add onions, and if desired, the lemon juice. Toss together.
  7. Remove from heat and serve.
  1. Serves 4. Per serving: 130 calories, 7g total fat, 0.5g saturated fat, 0g cholesterol, 50mg sodium, 14g total carbohydrate, 3g dietary fiber, 4g protein
